*Disclaimer: I don’t normally do two of these work-outs on the same day, but I was feeling tired/lazy the day before so I missed my work-out. I’m kinda on a roll right now so I didn’t want to skip one. Skipping work-outs for me is like the gateway straight to the couch.

So,  I had a dream about Martha Stewart. We were totally BFFs.

I have no idea why Martha has a third hand, but she IS the
Domestic Diva so anything is possible.

I think it’s because I roasted AN ENTIRE CHICKEN yesterday and deboned it all to make soup tomorrow. One roasted chicken. Three healthy dinners. Done and done. I seriously think that the Domestic Diva would’ve been impressed.

Ready for the oven! Yes, that is my computer in the background and yes, I was consulting with Food Network.

If there’s one thing I’ve learned on this journey to better health is that it’s crucial to PLAN AHEAD. I’ve always made a grocery list out for the whole week, so that part wasn’t hard, but I need to do some extra planning to make sure we always have healthy choices on-hand so we don’t end up choosing the alternative. And by alternative I mean the marshmallow Peeps I have hidden in the back of the pantry.

I have to cross-reference our social calendar and extracurricular activities (for example, roasted chicken works for Monday, but that means John has to be on point for O’s gymnastics class because we have irrational fears of our oven exploding if it’s left on when we’re not home, and then we’ll have ready-to-go Chicken Soup on Thursday because swim class gets out late and we’ll all be ready to gnaw our own hands off from hunger, etc etc. It’s a complex system).

Another thing I’ve learned is that if your partner is willing to go along for the ride, it’s a helluvalot easier. Safety in numbers. What’s gonna work? Teamwork. That sort of thing.

For lunch this week, I have planned egg salad over shredded lettuce. Normally I’d get a little fancier and do mixed greens and spinach, but I had an entire bag of that shred lettuce that you use for taco salads and I hate to waste if I don’t have to. What is up with those bags? It’s like the shreds are waiting to exhale and when you split the bag open, they double in size and take over your refrigerator.

I added raw slivered almonds to the top of mine for some extra crunch – SO YUM. John wasn’t so sure about the almonds but now he’s been eyeing mine enviously and is going to try it tomorrow. I’m a culinary genius, what can I say?

Here’s what else: I came down with a cold. Does anyone else have this happen? You get all geared up to exercise and eat right, start to get into your groove and them – BLAM-O! – you get sick. It’s usually a great excuse for me to go ahead and let my plans derail like a speeding train with faulty wiring, but not this time! I am sticking to my guns and eating the food I have planned and checking my work-outs off the calendar with a bright pink highlighter.

It kinda feels great to be good to myself in this way. Even if all I want to do is burrow under the covers and eat my weight in saltine crackers and popsicles.

And tomorrow is a new day!

    Yum! I love a whole roasted chicken. I have a recipe for the perfect roast chicken and that about sums it up. I think it might be Ina Garten. But I digress. Looks yum and good on you, girl!

    Yes, I always get sick when I (ever so infrequently) decide to go all healthy and whatnot. I think my body goes into shock and the immune system is temporarily shot.

    You may motivate me yet!

    You and Martha make quite the pair! I need to do the meal planning thing. So key, yet somehow I just got to the store EVERY day, so dumb.

      Ha ha! Thanks, Stacie! I started doing the meal-planning years ago and it works well for me because it A) helps save money and B) saves time — I hate going to the grocery!
